Grilled Veggie Sandwich with Muhamara

Preheat oven to 450°F. Toss veggies with oil in one layer on a large roasting pan. Season with salt and pepper.
Roast the vegetables, stirring occasionally, until tender and starting to caramelize, 30-35 minutes. Let it cool.
Spread the Muhamara mixture on both of the bread halves. Top with the roasted vegetables, arugula, red cabbage and crumble some feta cheese on top. Cut sandwich into wedges and serve.
