Take all of the dressing ingredients and whisk them together in a bowl. Set off to the side.
Seed and dice the tomato and place into a mixing bowl.
Peel and cut the red onion julienne style and add into the mixing bowl.
Dice the avocado. Add to the mixing bowl.
Chop the cilantro and parsley. Add to the mixing bowl.
Sprinkle the fresh mint over the entire mixing bowl.
Heat and add the Wild Garden Rice & Lentil Pilaf into the mixing bowl.
Pour dressing over the salad and stir until all of the contents have blended together. Enjoy!
