Stuffed Jack-O-Lantern Bell Peppers

 Bell Peppers
 2 Wild Garden Couscous Pilaf pouches
 Olive oil or non-stick spray

Preheat oven to 350 degrees F.

Wash peppers. Use a knife to cut out a jack-o-lantern face on the flattest side of your pepper.

Cut around the top of the bell pepper to remove the stem. Scoop out and discard the membranes and the seeds.

Lightly grease a baking dish with Olive oil or non-stick spray. Place peppers and pepper tops in baking dish. Bake for 20 minutes or until pepper is cooked but still firm.

Squeeze Wild Garden Couscous pouch gently to separate contents. Tear pouch halfway and open to vent. Place pouch upright in microwave. Cook on HIGH for 90 Seconds.

Stuff peppers with couscous from the pouch with a spoon and serve!
